Tuesday’s in our house has become “Taco Tuesday,” (thank you Lego movie). However, this does not mean just boring old tacos every week…. Nope, not in this household. It is more of a jumping off point so it should probably be called “taco style food” Tuesday’s, since I make all types of different things like taco pie, burritos, taco wonton cups, and more. The possibilities are endless. All that being said, “One Pot Taco Quinoa” is one of our favorites. Right now is also baseball season and my Continue Reading
Healthy Eating -- For the Love of 3
Eating healthy is important, both for your body and your mind.
About 6 months ago I quit buying cereal altogether. The process of quitting was slow, but I realized it probably needed to be done.. It started with just trying to buy the best of what there was out there (cereal wise) but being in Okinawa there wasn't a lot here at the commissary. Since my children love cereal so much I came up with this simple and delicious recipe for coconut cranberry vegan granola. Like I said, my children love cereal. However, 30 minuets after eating it they were hungry Continue Reading
Eating as many vegetables as possible in one meal is very important to me (Eating The Rainbow). Plus, when food is bright and colorful it is much more fun to eat. I am always trying to come up with recipes that I can put my rainbow in. This Teriyaki Quinoa Pineapple Bowl is definitely one of my favorites. Even if you are not allergic to milk this vegan hot chocolate is actually very delicious. So delicious in fact that this is how we Continue Reading
Watermelon is one of my family's favorite fruits. My husband likes it so much we made him a watermelon cake for his birthday. When my children are sick I feed watermelon to them to keep them hydrated, plus it is an easy way to get lots of vitamins and minerals in them. The sugar helps to give them a little energy boost so they feel better. It has helped with fever, sore throats and stomach flu. It is a nutrient dense food and contains about 22 vitamins and minerals along with being 92% water. It Continue Reading
This morning after my abs workout and a quick tabata with the kids, they were hungry. They wanted muffins and my oldest daughter asked to help make them. My son wanted to exercise with his Yoga for Kids DVD (his workout attire for the morning was underwear and tennis shoes). After getting my two younger ones settled, Liorah and I went on a hunt for ingredients. We couldn't seem to find all the ingredients for any of our normal recipes. I wanted to make something gluten free and vegan so the Continue Reading
