Tuesday’s in our house has become “Taco Tuesday,” (thank you Lego movie). However, this does not mean just boring old tacos every week…. Nope, not in this household. It is more of a jumping off point so it should probably be called “taco style food” Tuesday’s, since I make all types of different things like taco pie, burritos, taco wonton cups, and more. The possibilities are endless. All that being said, “One Pot Taco Quinoa” is one of our favorites.
Right now is also baseball season and my two older kids have practice on both Tuesday and Thursday evenings from 5-7 pm. These are the times that I need a quick meal that doesn’t take long to prepare, is tasty, and healthy. I usually don’t advocate using this much processed food in one meal but sometimes you just need some extra help.
I added lots of fresh vegetables to try and balance it so you are still eating the rainbow. This, like most of my recipes is very versatile and you can add and take away what you want. I have also made this One Pot Taco Quinoa with eggplant, carrots and spinach. The meal holds well and is even better the next day on some wilted greens. Always try to use organic when it is available and you are able to access it. This meal is full of protein and good carbs (lots of fiber) and vitamins. We top ours with avocado, cilantro and cashew cheese. I hope you enjoy this quick easy meal.
2 Cups Uncooked Quinoa
3 Cups Water or Broth
1 10oz Can Rotel
1 Can Organic Corn Drained
1 Can Black Drained and Rinsed
1 Can Fire Roasted Green Chilies Chopped
1 Packet of Taco Seasoning (or your own taco seasoning)
1/2 Red Onion Diced
1 Medium Zucchini Diced
1 Orange Bell Pepper Diced
1-2 Cloves of Garlic Minced
1 Cup Chopped Kale
Salt and Pepper to taste
Dump everything in one large pan or pot stir and bring to a boil. Cover with a lid and turn down to simmer and let cook for about 15 min, or until quinoa is done. Depending on how spicy you like your food you can use a spicy seasoning and rotel. We use all mild because of the kids. You could also use 2 cans of rotel and one less cup water. Top with your favorite taco toppings and enjoy.
